Team Something Navy's Banana Bread Bake Off

Is it just us or does it seem like banana bread is taking over Instagram right now?

Like many other people, team Something Navy is spending more time in the kitchen than usual. So, of course, we had to get in on the banana bread baking that is likely taking over your Instagram feed. We decided to put our favorite recipes to the test in a banana bread bake off, and we’re letting the Something Navy Instagram audience select the winner today. Take a look at all the recipes below and happy baking!

Recipe 1: Tara's Vegan Peanut Butter Chocolate Chip Banana Bread

Recipe adapted from Connoisseurus Veg

Ingredients:

  • 3 medium overripe bananas
  • 1/3 cup organic granulated sugar
  • 1/3 cup organic brown sugar
  • 1/3 cup canola oil (or your favorite baking oil)
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1 teaspoon salt
  • 1 cup chopped vegan semi-sweet chocolate
  • 1/4 cup melted peanut butter

Time to Prep: 15 Minutes

Time to Cook: 50 Minutes

 

Directions:

  1. Preheat the oven to 350 degrees
  2. Lightly oil a 9-inch loaf pan and place a strip of parchment paper widthwise
  3. Peel and mash the bananas
  4. Add sugar, oil, and vanilla to the bowl with the bananas
  5. Then add flour, baking soda, and cinnamon
  6. Stir all ingredients together
  7. Add vegan chocolate chips and melted peanut butter to the mix
  8. Spoon the batter into the prepared loaf pan and sprinkle brown sugar on top
  9. Bake for 50 minutes
  10. Allow banana bread to cool for at least 15 minutes before serving

Recipe 2: Anna's Vegan and Gluten-Free Chocolate Chunk Banana Bread

Recipe adapted from @elizabeth_simplyagave

Ingredients:

  • 3 small to medium very ripe bananas 
  • 1 tablespoon coconut flour
  • 1 1/3 cup almond flour
  • 1/2 cup oat flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 cup almond milk
  • 1/4 cup coconut oil
  • 1/4-1/3 cup agave
  • 1/2 teaspoon cinnamon
  • 1 teaspoon vanilla

Prep Time: 15 Minutes

Bake Time: 37-38 Minutes

 

Directions:

  1. Preheat oven to 350 degrees
  2. Mash the bananas and combine all ingredients
  3. Add in chocolate chips or walnuts
  4. Pour into a 9 inch loaf pan or a 9 inch cake pan
  5. Bake for 37-38 minutes at 350 degrees

Recipe 3: Jamie's Chocolate Chip Banana Cake

Ingredients:

  • 1/2 stick of butter
  • 1 egg
  • 1 cup of sugar
  • 3 heaping tablespoons of sour cream
  • 1 teaspoon of baking soda
  • 1-1/2 cups of flour
  • 2 large bananas
  • Chocolate chips or nuts as desired

Time to Prep: 20 Minutes

Time to Cook: 1 Hour

 

Directions:

  1. Preheat oven to 350 degrees
  2. Cream the butter
  3. Add the sugar and eggs to the creamed butter and mix well
  4. Sift the flour in a separate bowl
  5. Add one teaspoon of baking soda into the sour cream and stir
  6. Alternate adding the sifted flour and sour cream into the butter, egg, and sugar mixture
  7. Mash the bananas and add them to the mixture last
  8. Add any nuts or chocolate chips as desired
  9. Transfer mixture to an 8x3x4 loaf pan
  10. Bake for 1 hour at 350 degrees

Recipe 4: Meghan's Favorite Banana Bread

Ingredients:

  • 3 ripe bananas
  • 2 eggs
  • 1 cup granulated sugar
  • 1/2 cup light brown sugar
  • 1 stick butter (softened)
  • 1/3 cup milk 
  • 1 teaspoon vanilla 
  • 1/4 cup greek yogurt
  • 1 teaspoon cinnamon
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 3/4 cup flour

Prep Time: 15 Minutes

Cook Time: 1 Hour

 

Directions:

  1. Preheat oven to 350 degrees
  2. Place softened butter in a mixer and add in both sugars; mix until smooth
  3. Add in eggs, one at a time
  4. Add cinnamon, vanilla, greek yogurt (or you can substitute with sour cream), milk, baking soda, and salt
  5. Smash the bananas in a large bowl with a fork, and then combine with the wet mixture
  6. Stir in the flour until it is just incorporated
  7. Pour into a greased loaf pan and bake for about an hour or until a toothpick comes out smooth

Recipe 5: Taylor's Insta-Worthy Banana Bread

Recipe adapted from Chrissy Teigen's Cravings Cookbook

Ingredients:

  • 2 cups mashed bananas (about 5-6 bananas)
  • 2/3 cups canola oil
  • 4 eggs
  • 2 cups all-purpose flour (and extra to dust pan with)
  • 2 cups sugar
  • 1 box vanilla instant-pudding mix
  • 1 teaspoon baking soda
  • 1 1/2 teaspoons kosher salt
  • 1 cup unsweetened shredded coconut
  • 1 (3.5 oz) bar dark chocolate (chopped into chunks)
  • Salted butter optional for serving

Prep Time: 20 Minutes

Cook Time: 1 Hour 

 

Directions:

  1. Preheat the oven to 325 degrees
  2. Mix the mashed bananas, eggs, and oil in a large bowl
  3. In another bowl, mix together the flour, baking soda, salt, sugar, and pudding mix
  4. Mix the dry ingredients into the bowl of wet ingredients. Chrissy recommends to do this part manually (rather than with a mixer) so the end result is fluffy
  5. Add the chopped dark chocolate bar and shredded coconut to the batter
  6. Grease a pan with butter and coat it with a layer of flour
  7. Baking time will vary, but Chrissy advises to bake it until the cake bounces back when pressed or when a toothpick comes out clean
  8. Let it cool for about 10 minutes and flip it onto a clean plate or tray for serving

Maggie's Classic Chocolate Chip Banana Bread

Recipe adapted from the New York Times Cooking

Ingredients:

  • ¼ pound cool butter (1 stick), more for greasing pan
  • ¾ cup dark brown sugar
  • 2 eggs, at room temperature
  • 2 ⅓ cups very ripe bananas (about 5)
  • 2 cups all-purpose flour 
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • 3 tablespoons of chocolate chips (optional)

Prep Time: 20 Minutes

Cook Time: 55-65 Minutes

 

Directions:

  1. Preheat oven to 350 degrees
  2. Lightly grease a 9-by-5-inch loaf pan
  3. Using an electric mixer, cream butter until smooth, then add sugar and cream together  One at a time, mix in the eggs
  4. Mix in bananas until only small lumps remain
  5. Stir dry ingredients together and mix into banana mixture just until combined
  6. Add chocolate chips
  7. Pour the batter into prepared pan
  8. Bake about 55 to 65 minutes, until a toothpick inserted into the center comes out clean
  9. Let cool in pan 10 minutes, then turn out onto wire rack and let cool completely before wrapping tightly for storage

Recipe 7: Nikki G's Classic Banana Bread With A Healthy Twist

Recipe adapted from AllRecipes.com 

Ingredients:

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup brown sugar
  • 2 eggs, beaten
  • 2 1/3 cups mashed overripe banana
  • 1/2 cup butter or use 1 container of Siggi's Vanilla Cinnamon Yogurt

Prep Time: 15 Minutes

Cook Time: 1 Hour and 5 Minutes

 

Directions:

  1. Preheat the oven to 350 degrees and lightly grease a 9×5 inch loaf pan
  2. Combine flour, baking soda, and salt in a large bowl 
  3. In a separate bowl, cream together butter and brown sugar. Then, stir in eggs and mashed bananas until well blended
  4. Stir the banana mixture into the flour mixture
  5. Pour batter into the prepared loaf pan
  6. Bake in preheated oven for 60 to 65 minutes, until a toothpick inserted into the center of the loaf comes out clean
  7. Let the bread cool for 10 minutes 

Recipe 8: Alexandra's Crowd Pleasing Banana Bread

 

Ingredients:

Yield: 2 Loaves

  • 6 ripe bananas
  • 2 cups sugar
  • 2 eggs
  • 3 cups AP flour
  • ½ cup melted butter
  • ½ cup greek yogurt
  • ½ teaspoon cinnamon
  • 2 teaspoon baking soda
  • 2 teaspoon maldon sea salt

Prep Time: 15 Minutes

Cook Time: 1 Hour 

 

Directions:

  1. Preheat the oven to 325 degrees
  2. Add dry ingredients to a bowl
  3. In a separate bowl, mash the banana and stir in wet ingredients
  4. Combine all ingredients into one bowl, and pour into pan
  5. Bake at 325 for 1 hour
